I love Macaroni and Cheese. I hate the calories and fat in a typical serving of Macaroni and Cheese. Luckily, they have fat free cheese and skim milk. Using these two ingredients in your Macaroni and Cheese Recipe greatly reduces the calories and fat per serving. Of course, the size of your serving makes a big difference, too. For this recipe, the total calories is 1440 and the total fat is 38 grams. If you divide it up into 10 servings, that equals 144 calories a serving and 3.8 grams of fat per serving.
When I made this, I didn’t use the margarine. Instead, I sprayed the pot with PAM. This took out 36 grams of fat from the recipe, and reduced the calories from 1440 to 1160. This made one serving 116 calories and .20grams of fat per serving.
8 oz Elbow Macaroni cooked
1/4 Cup Margarine
3 Tbsp Whole Wheat Flour
1/8 Tsp Dry Mustard
1/8 Tsp Salt
1/8 Tsp Pepper
2 Cups Skim Milk
2 Cups Shredded Fat Free Cheese (I used Kraft)
1 Cup crushed Fat Free bread crumbs (I used Rothbury Farms)
Preheat oven to 350 degrees. In a medium saucepan, melt the butter (or spray the PAM). Add in the flour, mustard, salt, and pepper. Cook until mixture is smooth and bubbly. Slowly add in the milk. Cook over medium heat until the mixture boils, stirring constantly. Add in cheese. Stir until melted. ((I reduce the heat while the cheese melts.) Add the pasta and mix it all together. Pour into a a 2 quart casserole dish. Crush the bread crumbs and sprinkle them on top. Bake in the oven for about 25 minutes.
